If I really have to choose one: butter! For me, good butter is the foundation of cooking.
Which place in Ostend inspires you most as a chef?
To avoid falling into a cliché and mentioning the fish market, I'll say the weekly market on Wapenplein.
How would you describe your style of cooking?
We always start with quality products, preferably local, and let the dish speak for itself without unnecessary frills.
Classic where necessary, contemporary where possible, with respect for the product, the guest and the moment.
